Bitter gourd thokku

 


Ingredients

2 Nos- Bittergourd, Cut it into small pieces 
2 No - Tomato, medium size
2 Ns - Onion , medium size
5 garlic pods
1/4 tsp - turmeric powder
3/4 tsp - chili powder
1 tsp - coriander powder 
1/2 tsp Jaggery
1tbsp- tamarind water (1/2 lemon size tamarind)
1 tbsp oil
1/2 tsp mustard
1/2 tsp Cumin seeds
pinch of fenugreek
1 spring Curry leaves
1tsp Salt

Preparation

Take a pan, add the oil, and fry the bitter gourd until it is cooked. Then, set it aside. 
In the same pan, heat the oil, add the mustard, cumin, fenugreek, curry leaves, garlic, and onion, and cook until the onion is tender. Next, add the tomato and cook for a while till it's smashed. After that , add salt, the turmeric, chilli powder, and coriander powder, and stir everything well. Following that, add the bitterguard, tamarind water, and jaggery, bring to a boil, and then turn off the heat.
