Ridge gourd curry

Ingredients

1 tbsp- coconut oil 
1/4 tsp cumin  seeds
1 spring curry leaves
1 onion, medium size
4 garlic pods
1/2 cup Ridge gourd, check the taste whether it's good or bitter before starting
1/2 tbsp -thick tamarind syrup, don't add more

Roast and Grind 

1/2 tsp oil
3/4 tbsp Peanut
3/4 tbsp Urad dal
1/2 tsp Coriander seeds
1 tomato , medium size
3/4 tsp chili powder


Preparation

Take pan , add items one by one from the 'Roast and Grind' list. Once it's become cool, transfer it into a mixer and grind it till smooth paste  then keep the masala aside.

Take cooker + oil + cumin seeds+ curry leaves + onion + garlic+ ridge gourd, and fry them for 5 minutes.  Add masala and fry for 2 minutes, then add tamarind syrup and salt . Add enough water in this stage and check the salt . Once it's boiled, close the cooker with whistle. wait for 1 whistle to come, soon after switch off the flame.
