Ingredients
6 Brinjals , Cut each brinjal from the base till upwards, but don't cut the entire brinjal.
1 big size onion, cut it small size
1 big size tomato , cut it small size
1 tsp ginger garlic paste
2 green chili
1/2 tsp mustard
1/2 tsp cumin seeds
1/2 tsp Pepper
1 spring curry leaves
1/4 tsp turmeric powder
3/4 tsp chili powder
3/4 tsp coriander powder
3/4 tsp salt
2 tbsp coriander leaves
Roast and Grind without water
2 tsp Peanuts
1/4 tsp Fenugreek seeds
2 tsp sesame seeds
Preparation
Take a pan , add items one by one from the 'Roast and Grind' list. Once it's become cool, transfer it into a mixer and grind it till it's a smooth paste, then keep the peanut masala aside.
Take a pan, add oil and brinjals, fry till the colour starts changing and keep it aside.
Take a cooker, add oil + mustard + cumin + pepper + curry leaves and onion, fry till it gets golden brown and then add green chilies, ginger and garlic paste, fry till the raw smell goes away. Add turmeric, chilli powder, and coriander powder and mix them well for 2 minutes. Afterwards, add the tomato, brinjal, salt, and tamarind juice, then lock the cooker with a whistle and wait for 1 whistle, and then turn off the heat.
Once the pressure is released, add the ground peanut masala and coriander leaves.

grind the 2 tsp of fried peanuts and 1 tsp of fried sesame seeds(Ellu) and smooth paste

1 tsp chili powder
1 tsp coriander powder
1/4 tsp turmeric powder
tamarind paste

Preparation
Take pan add oil and fenugreek+ pepper + curry leaves + garlic + onion+ ginger garlic paste + tomato + sault for some time + chili powder+ turmeric powder + coriander powder and mix them well. Add the brinjal and then add the tamarind paste and add some water. Finally add the grinded paste and add the few piece of vellam.
